Mushroom Cheddar Scramble with Toast
Prep Time: 15 minutes
1 tsp canola oil
1 1/2 tsps butter, whipped
1/2 cup shitake mushrooms
1 cup egg substitute
1/4 cup low fat cheddar cheese, shredded
1/4 medium onion, minced
1 slice whole wheat bread
1. Warm a skillet over medium heat and add canola oil.
2. Sauté mushrooms with minced onion until softened.
3. Pour in egg substitute and stir to scramble. Top with shredded cheese.
4. Serve with whole wheat toast topped with butter.
