Pineapple Chicken Skewers with Grilled Zucchini
6 oz (170g) chicken breast
1/4 fresh whole pineapple
1/2 medium bell pepper
1/4 medium onion
2 tsp olive oil
1 medium zucchini
- Cube chicken and cut pineapple, bell pepper and onion into chunks.
- Place cubed chicken, pineapple chunks, bell pepper chunks, and onion chunks on skewers and brush with oil.
- Grill until the chicken is cooked through. Grill zucchini and slice after grilling. Serve zucchini on the side.
1/2 whole – 1/2 cup bell pepper
1/4 whole – 1/4 cup chopped onion
1/4 whole – 3/4 cup cubed pineapple
