Grilled Pork Salad with Carrot Ginger Dressing

Salad Ingredients
– 1/4 cup red onion, chopped
– 1/4 whole cucumber, cubed
– 1/4 whole tomato, cubed
– 1/4 medium apple, chopped
– 1 1/2 cups romaine lettuce, chopped
– 4 oz pork tenderloin
– 1/8 tsp sesame oil
– 1/4 tbsp low sodium soy sauce
– 1/4 tsp(s) sesame seeds
– fresh cilantro, chopped
Dressing Ingredients
– 1 tbsp oil – canola
– 1/2 tsp oil – sesame
– 1/2 tbsp water
– 1/4 tbsp low sodium soy sauce
– 1/2 tbsp lemon juice
– 1 tbsp seasoned rice wine vinegar
– 1/4 whole garlic clove
– 1/4 whole shallot
– 1/2 knob of 1″ ginger
– 2/3 whole large carrot
Directions
For the salad:
1. Pour the soy sauce and sesame oil over the pork in a container and turn the meat to coat. Cover and refrigerate from 1 hour to overnight.
2. Sprinkle the pork with freshly ground black pepper to taste. Grill, turning a few times, until the exterior is browned and the meat is medium rare approximately 9 to 10 minutes. Let it rest for 5 minutes and then cut it into ½-inch slices.
3. Chop the romaine, onion and apple. Cut tomato and cucumber into cubes. Roughly chop the cilantro.
4. In a large bowl, combine the romaine, apple, tomato, cucumber, onion, and cilantro. Add the pork and half of the dressing and toss. Sprinkle with the sesame seeds.
For the dressing:
1. Cut carrot and shallot into chunks. Peel and cut ginger and garlic into smaller chunks.
2. Combine the carrots, fresh ginger, shallot, garlic, vinegar, lemon juice, soy sauce and water in a blender and process to a fine puree. Add the sesame oil and canola oil. Blend to combine. Dressing will make about a 1/3 of a cup.
