Stuffed Avocado

– 1/2 tbsp capers
– 2 tbsp fresh cilantro, chopped
– 4 oz shrimp, cooked 
– 1 green onion (scallions), diced
– 1/4 whole tomato, chopped
– 1 tsp lemon juice
– 1/2 medium avocado, halved
– 1/4 cup canned mango, cubed
– 1 pinch of black pepper


1. Grill shrimp to desired degree of doneness. Once cooled, dice shrimp.

2. Remove pit from avocado. Rinse and drain capers.

3. Rub the avocado halve with lemon juice to prevent browning. 

4. In a medium bowl, combine the tomato, scallions, shrimp, cilantro, capers and black pepper.

5. Place the avocado halve on plate and top with the shrimp mixture.
