Breakfast Burrito

Start your day the right way with this tasty and filling breakfast burrito!

1/4 medium onion

1/4 medium potato

1/4 medium tomato

2/3 cup egg substitute

3 tbsp low fat, shredded cheddar cheese

1 whole wheat tortilla (8 in or 20cm)



  1. In a medium saucepan, bring water to a boil.
  2. Peel potato and cut fourth of potato into 1-inch pieces. Place potatoes in pot and cover. Reduce heat to medium and cook for about 10 minutes or until tender but still firm. Drain and cool.
  3. Dice onion and tomato. Warm a skillet over medium heat and spray a pan with cooking spray.
  4. Add diced onion and cubed potato. Let cook until the onion is softened, and the potato is warm throughout. Stir in diced tomato and pour in egg substitute, stirring to scramble. Sprinkle with shredded cheese and wrap in tortilla.



1/4 whole tomato= 1/4 cup chopped

3/4 oz (20g) low fat Cheddar cheese= 3 Tbsp shredded
