Cobb Salad Recipe

This tasty twist on Cobb Salad will keep you full of energy all day long.

Serves 1

Prep Time: 35 Minutes

Ingredients

5 oz turkey breast(s) (1 breast is 4 oz)
1/8 whole avocado(s) – medium
1 whole Egg, Large
1/6 whole cucumber(s)
1/2 whole tomato(es) – medium
1 tbsp(s) salad dressing – balsamic vinaigrette
3/4 cup(s) yogurt – nonfat light
2 cup(s) lettuce – Romaine

Directions

1. Preheat oven to 375F and bake turkey throughout.

2. While baking turkey, hard-boil egg. Remove shell and slice.

2. Dice cucumber, avocado, onion and tomato.

3. In a bowl, combine romaine, veggies, egg, and cooled, diced turkey. Top with dressing and serve with yogurt on the side.

Tips: 4oz romaine= 2 cups shredded; 1/8 medium onion= 2 Tbsp chopped; 8oz light, nonfat yogurt= 1 cup; 5oz turkey breast= size of 1 2/3 decks of cards
